

Hey everyone!
So this is MY story. I believe that everyone has known someone who has been affected with some type of cancer. I believe all cancer should be supported in anyway possible. Some run/walk raise awareness, support them buy buying a pair of shoes, raise money or go door to door exct….. lots of ways to show your support.
This is my first year in British Columbia and so far it has been fantastic, from sight seeing to all the neat little stores that provide information and products that I can use in my house.

I have decided to enter into this competition because I have known a lot of people who have had cancer, or have had the beginning stages of it. My Grandmother, Uncle and a couple friends. This competition is all about MoVember a lot of people are aware of this but some my not know. It is all about raising money for prostate cancer. The details are on the donation page below.

As for my page, I started Reddy Made Cakes a couple years ago in London Ontario and it slowly grew in the number of people that joined my group. Since then I have done some competitions in Toronto as well as in London. I hope to one day teach or own my own bakery/cafe. There are many pictures on my page as well as the newest pictures from the competition for MoVember.

I have done this recipe before but I found it didn’t have enough rum flavor or egg nog flavor in the butter cream, I added 2 tbsp more rum and a cup of eggnog then flavored as I was making it.
Eggnog Cupcakes
Yield: about 12 cupcakes
For the cupcakes:
1 1/3 cups all-purpose flour
¼ tsp. baking soda
½ tsp. baking powder
½ tsp. salt
¼ tsp. freshly ground nutmeg
¼ cup dark rum
1 cup eggnog
¼ cup vegetable or canola oil
1 tbsp. apple cider vinegar
1 tsp. vanilla extract
1 cup sugar
For the frosting:
300g unsalted butter, at room temperature
2½ cups confectioners’ sugar, sifted (Added a cup at a time to taste before adding more)
Pinch of salt
Pinch of freshly grated nutmeg (Added a tsp more)
2 ½ tbsp eggnog (Added 1 cup instead)
3 tbsp. dark rum
For garnish:
Ground cinnamon or grated nutmeg
Cinnamon sticks
Directions:
To make the cupcakes, preheat the oven to 350˚ F. Line cupcake pans with paper liners. In a medium bowl, combine the flour, baking soda, baking powder, salt and nutmeg; whisk to combine. In the bowl of an electric mixer, combine the rum, eggnog, vegetable oil, vinegar, and sugar. Beat on medium-low speed until well blended. Add in the dry ingredients and mix on low speed just until incorporated.
Divide the batter between the prepared cupcake liners, filling the cups 2/3 full. Bake 22-24 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan 5 minutes, then transfer to a wire rack to cool completely.
To make the frosting, place the butter in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until smooth, 20-30 seconds. Add in the powdered sugar, salt and nutmeg, and mix on medium-high speed until incorporated and smooth, about 1 minute. Scrape down the sides of the bowl. Add in the eggnog and whip on medium-high speed until light and fluffy, 4 minutes. With the mixer on medium-low speed, blend in the rum.
Fill a pastry bag with the frosting and decorate the cooled cupcakes as desired. Sprinkle with ground cinnamon or grated nutmeg, and garnish with cinnamon sticks if desired.
The reason I chose those cupcakes is because the theme was Pirates of the Caribbean. Jack Sparrow (Johnny Depp) has an awesome mustache and I thought I could come up with some cool ideas. The DVD’s are in the photos to hint that it actually had a MOS OF THE MOVIES theme, not to mention the rum in the cupcakes and in the butter cream. Jack sparrow (Johnny Depp) is all about the rum when in the movie. The pictures consist of the actual rum I used in the cupcakes, fondant fixtures, gold mine gum candies from “Scoop n’ Save” along with a treasure chest, skull rings, pirate hat that is also a ring, and chocolate gold coins.
